Laurie's Coconut Pound Cakes
Ingredients ------------------------------ - 1 1/2 cups sugar - 3/4 cup butter, softened - 1 (3-ounce) package cream cheese, softened - 1/4 cup cream of coconut - 3 eggs - 1 teaspoon vanilla - 1 1/2 cups all-purpose flour - 1 cup flaked coconut - Fruit preserves or jam Cooking Instructions: Heat oven to 350. In large mixer bowl combine sugar, butter and cream cheese. Beat at medium speed, scraping bowl often, until creamy (1 to 2 minutes). Add cream of coconut, eggs and vanilla. Continue beating until smooth (1 to 2 minutes). By hand, stir in flour and coconut. Spoon into paper-lined or greased muffin cups filling 3/4 full. Bake for 32 to 38 minutes or until light golden brown. Serve warm or at room temperature; top with fruit preserves or jam. Yield: 16 cupcakes Preparation: 10 minutes Baking: 32 minutes
